Here is a fun and unique twist to your typical use of quinoa, cinnamon quinoa parfaits. I like to prepare some extra quinoa by cooking with some of my homemade pumpkin spice oat mylk, but If you already have some leftover cooked quinoa you need to use up definitely try these out.

They are super easy to prepare you just need to add your cooked quinoa to mason jars, along with coconut yogurt of your choice, and sauteed maple apples.

How to make your maple apples is simple:

  1. Chop your apples
  2. Saute with your maple syrup, chia seeds, hemp seeds, pumpkin seeds, and cinnamon for a few minutes, stirring throughout.
  3. Let them cool completely before adding to your parfaits

Cinnamon quinoa parfaits

Ingredients

Quinoa layer:

  • 1/2 cup dried quinoa
  • 1 cup homemade pumpkin spice oat milk oats, dates, vanilla extract, pumpkin pie spice, filtered water

Cook 15 minutes.

    Maple apple layer:

    • 1 Apple chopped
    • 1/2 Tbsp chia seeds
    • 1/2 Tbsp hemp seeds
    • 1 Tbsp maple syrup
    • 1 Tbsp pumpkin seeds

    Add to a sauce pan and cook 5 minutes, stirring frequently. Let sit for 5 minutes.

      Coconut Layer

      • 1 cup coconut yogurt of choice
