Breakfast hash

Ingredients

  • 1/3 cup red onion
  • 1 Tbsp avocado oil
  • 2 Japanese sweet potatoes diced
  • 1 zucchini
  • 1 gala apple diced
  • 1 small package of kale
  • 1 package paleo sugar free bacon
  • 1 tsp maple syrup
  • 1/4 tsp garlic powder
  • Salt + pepper to taste

Instructions

  • Sauté onion with avocado oil for a few minutes.
  • Add in sweet potatoes and cook until softened (5 min).
  • Add in zucchini, apple, and cooked diced bacon and cook for 5 minutes, add kale and cook a couple minutes.
  • Make holes in hash and crack 4 eggs and cook for 5 minutes.
  • I covered Pan for a couple minutes to assure cooked through.
