 I tend to go through phases of wanting all the savory breakfast’s and then a phase of give me all the sweet breakfast’s. As of late I have been team sweet breakfast’s and I am not mad about it one bit. Every week I like to switch up my breakfast ideas because I can’t do the same item everyday let alone across multiple weeks. So you will always see a variation of what I am making every week.

For this week’s meal prepped breakfast I made some baked berry oats. What I love about this recipe is how easy it is to put together. This recipe is pretty much is fail proof so you don’t have to worry about messing it up.

Here are the easy steps to get these baked oats prepped:

  1. Mix your dry ingredients in a bowl
  2. In another bowl mix your wet ingredients
  3. Add your dry ingredients to the wet ingredients and mix
  4. Fold in some frozen berries
  5. Pour into a greased 8×8 baking dish and top with more frozen berries
  6. Bake 350 for 40-45 minutes (may need to cook longer depending on your oven)
  7. Let cool and drizzle some raw coconut butter on top

Once done I like to cut into square and then store in individual tupperware so in the morning I can just grab and run out the door. These taste great warm or cold so the option is yours.

Baked berry oats

Ingredients

  • 2 cups gluten free sprouted quick oats
  • 1/2 cup maple sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup pecans
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 can coconut milk
  • 1-2 cups frozen berries

  • Mix dry ingredients in a bowl
  • Mix wet Ingredients in a bowl
  • Combine wet + dry and mix
  • Add to an 8x8 greased baking dish
  • Top with frozen fruit and pecans
  • Bake 350 for 35-40 minutes
