Chickpea Faux “Tuna” salad
Ingredients

oz.can chickpeas
3
celery stalks chopped
1
red bell pepper chopped
1/4
cup
chopped onion
1/2
large avocado
Salt and pepper to taste
1/2
tsp
paprika
1/2
tsp
garlic powder
2
lemons juiced
1/3
cup
chopped cilantro
Optional: 1 Tbsp spicy brown mustard
Instructions
Rinse and drain your chickpeas
Add to food processor and pulse a couple times (DO NOT PROCESS YOU WILL END UP WITH HUMMUS)
Chop your celery, bell peppers, onions, and cilantro
Add the chopped vegetables to chickpeas, add lemon juice, avocado, seasoning, and mix
Taste and adjust seasoning if needed
Chill in refrigerator for 30 minutes before serving
