Mexican Style Stuffed Peppers:
Ingredients
2-3
red or green bell peppers

oil

cup
diced onions

ground turkey

taco seasoning

chopped cilantro

cup
black beans
Omit if doing Whole30

cups
riced cauliflower
1/2
cup- 3/4 cup crushed tomatoes or tomato sauce
Salt + pepper to taste

jalapeno deseeded
Instructions
Add oil to pan and warm
Add onions with salt + pepper and sauté for 5 minutes
Add in ground turkey with taco seasoning and cook through (5-7 minutes)
Add in riced cauliflower, cilantro, beans, and crushed tomatoes, and mix
Cook for 5 minutes or until liquid is absorbed
Cut your bell peppers in half and deseed
Stuff each of your bell peppers and add to a 13x9 baking dish
Bake 350 F for 20 minutes or until bell peppers are nice and soft
