1cupchopped Persian cucumbers
1cupcherry tomatoes diced
1/3cupolives
1/3cupchopped cilantro or parsley
1/3cupchopped red onions
Optional: vegan feta cheese
Italian dressing:
3/4cupolive oil
1/4cupred wine vinegar
1tspdried basil
1tspdried parsley
1tspdried oregano
1/2tspsalt
1/4tspground pepper
3/4tspgarlic powder
1large lemon juiced
Instructions
Pasta Salad
Cook your pasta according to package
Chop you Persian cucumbers, tomatoes, olives, cilantro, and red onion
Once pasta is done cooking, drain, and rinse with cold water, transfer to a large bowl, sprinkle some olive oil, and mix to prevent pasta from sticking together
Homemade Italian Dressing
Prepare the dressing by adding everything to a jar and shaking or whisking, pour the dressing all over the pasta salad, and mix
Store in the refrigerator to chill for at least 1 hour before serving
