Roasted Beet Salad with Honey Halloumi Cheese
Ingredients
Roasted beets:
2
red beets
2
gold beets
1-2
Tbsp
olive oil or avocado oil
Salt and pepper to taste
Orange Honey Dressing:
1/4
cup
olive oil
3
Tbsp
red wine vinegar
1
Tbsp
manuka honey
Salt and pepper to taste
1
lemon juiced
1
large orange juiced
1
orange
Zested
about 2 Tbsp
Honey Halloumi:
Halloumi cheese
1
Tbsp
ghee or any oil you use
1
Tbsp
manuka honey
Additional ingredients:
Super greens or spinach
Sliced red onions
Optional: diced oranges
Homemade candied pecans
Instructions
Roasted Beets Instructions:
Peel the beets and chop into bite size pieces
Add beets to a lined baking sheet
Add olive oil and salt + pepper, and mix
Roast 400°F for 30-35 minutes or until fork tender
Let cool completely before adding to salad
Orange Honey Dressing Instructions:
Add all the ingredients to a jar and shake up
Store leftovers in refrigerator
Honey Halloumi Instructions:
Add ghee to a pan and warm through on medium heat
Add the sliced halloumi cheese
Drizzle the manuka honey all over cheese
Cook a few minutes on each side
Dice up and add to salad once cooled
Salad Instructions:
Add the greens to a bowl
Add roasted beets, sliced red onions, honey halloumi, and drizzle the dressing over the salad, and toss
