Grain Free Strawberry Shortcake Muffins:
Makes 12 Muffins
Ingredients

ripe banana

almond extract

vanilla extract

maple syrup

coconut mylk

cup
coconut oil melted

tsp
baking soda

cup
chopped strawberries + 5-6 strawberries sliced for topping

tiger nut flour

flaxseed meal
Instructions
Instructions:
Add ripe banana to a medium bowl and with a fork mash up
Add eggs, maple syrup, vanilla extract, almond extract, coconut milk, and mix
Add in dry ingredients and mix
Fold in chopped strawberries and mix
Add to lined muffin tins fill 3/4 of the way
Top with strawberry slices
Bake 350 F for 22-25 minutes or until toothpick comes out clean
Let rest 5-10 minutes before transferring to a wired cooling rack
Store in airtight container in refrigerator
