Grain-Free Blueberry Crumb Bars
Makes 9 large bars
Ingredients
Crust:
1 3/4
cups
almond four
3
Tbsp
coconut flour
1/2
cup
maple syrup
1/3
cup
coconut oil melted
1/2
tsp
cinnamon
Blueberry jam filling:
1 1/4
cups
blueberries
1/4
cup
water
1/3
cup
chia seeds
Instructions
Prepare the crust by mixing all ingredients in a bowl
Add crust to a lined 8x8 baking dish but reserve about 1/2 cup of the crust for topping
Prepare the blueberry chia seed jam by add the blueberries and water to a small pan on medium low heat
Cook down and smash up with spoon for a few minutes
Add in the chia seeds, mix for a couple minutes
Turn off heat and let sit for 15 minutes
Add jam to the crust, and crumble the remainder of the crust on top
Bake 350 F for 25-30 minutes
Store in airtight container in refrigerator
