Ingredients

Instant pot shredded tomatillo salsa chicken

  • 2 chicken breast
  • 1/2 cup tomatillo salsa
  • 1/2 cup bone broth
  • Salt and pepper to taste

Tomatillo salsa

  • 10-12 to matillos
  • 1 jalapeno deseeded
  • 1/2 yellow onion
  • 4-6 garlic cloves
  • 2 Tbsp avocado oil
  • Salt and pepper to taste
  • Handful of cilantro

Instructions

Instant pot shredded tomatillo salsa chicken

  • Add chicken, salsa, bone broth, salt and pepper to instant pot
  • Close, seal valve, set to poultry for 5 minutes
  • Let pressure release naturally (10-12 minutes)
  • Shred chicken

Tomatillo salsa

  • Add tomatillos, roughly chopped onions, whole garlic cloves, roughly chopped jalapeƱo, avocado oil, salt and pepper to a baking sheet lined with parchment paper
  • Bake 400 F for 20-25 minutes and broil for a few minutes after done
  • Carefully transfer to blender along with cilantro and blend
  • Optional add in: 1/4-1/2 cup bone broth, water, or vegetable broth to thin out the salsa
