Stuffed butternut squash boats with a curried quinoa, chickpea filling
Ingredients

butternut squash cut in half and seeds scooped out
1
cup
cooked quinoa
cooked in vegetable broth
1
can chickpeas drained and rinsed
2
handfuls of spinach
1/2
cup
dried cranberries
1
tsp
curry
1/4
cup
raw pumpkin seeds
1/2
tsp
turmeric
1/4
tsp
coriander
1/4
tsp
cumin
1/4
tsp
cinnamon
Salt + pepper to taste

Maple syrup

Instructions
Cook your butternut squash 425 for 30 minutes, once done make slits in butternut squash.
Cook quinoa with vegetable broth according to package
Once quinoa is done add chickpeas, pumpkin seeds, spinach, cranberries, seasonings to pot, mix, and cook for a couple minutes
Add stuffing mixture to butternut squash and enjoy!
