Teriyaki Chicken with Instant Pot Rice:

This teriyaki chicken with Instant pot rice is a 20 minute meal that needs to be added to your weeknight meal rotation. I always meal prep on Sunday’s for the week but it usually only last 3-4 days. And so around Wednesday or Thursday is when I have to prep more food for the remainder of the week. And usually that means quick, easy, one-pan meals.

Ingredients for teriyaki chicken:

  1. 2-3 chicken breast chopped up
  2. Garlic ghee or any oil you use
  3. Broccoli
  4. Bell peppers
  5. Sesame oil
  6. Coconut Aminos or soy sauce you use
  7. Teriyaki sauce
  8. Salt and pepper to taste

How to prepare the chicken on stove top:

I like to add my diced chicken with all the ingredients (except the broccoli and bell peppers) to a bowl and marinate for at least 30 minutes. And then I add my garlic ghee to a pan, warm oil, and add my chicken to pan and cook for 5-7 minutes. Then I add in my chopped broccoli and bell peppers and cook until softened, about 5-7 minutes.

How to prepare the chicken in Instant pot:

And if you wanted to, this could all be prepared in your Instant pot as well. Simply set your Instant pot to sauté function, warm the oil, add your chicken and brown a couple minutes. Add in about 1/2 cup of chicken bone broth, and top with the broccoli and bell peppers (but don’t mix in just let veggies sit on top). Set to manual high pressure for 5 minutes. And let pressure release naturally once done.

And if you haven’t tried making your rice in your Instant pot yet, it is a game changer. I like to cook mine with chicken bone broth for extra flavor and all those gut healing nutrients. But if that isn’t your jam stick to water.

Ingredients for Instant pot rice:

  1. White rice
  2. Chicken bone broth but you can substitute water or vegetable broth
  3. Ghee or any oil you use
  4. Salt and pepper to taste

How to prepare the rice:

Making the rice is super simple! I add all the ingredients to my Instant pot pot, mix, close Instant pot, seal valve, and set to the rice function for 12 minutes. And once done I let the pressure release naturally (about 10-12 minutes), open the Instant pot, and fluff the rice with a fork.

 

Teriyaki Chicken with Instant Pot Rice

Serves 3

Ingredients

  • 1 lb chicken breast chopped
  • 1 Tbsp garlic ghee substitute avocado oil and 1-2 tsp minced garlic
  • 2 cups broccoli
  • 2 red bell peppers
  • 1/3 cup teriyaki sauce ( I use
  • 1 tsp sesame oil
  • 1/4 cup coconut aminos
  • Salt and pepper to taste

Instructions:

  • Marinate the chopped chicken with the teriyaki sauce sesame oil, coconut aminos, salt and pepper for at least 30 minutes
  • While your chicken is marinating chop your vegetables
  • Add garlic ghee to pan and warm
  • Add the bell peppers and broccoli with some salt and pepper and cook until softened (about 5-6 minutes)
  • Transfer cooked vegetables to a plate and add your marinated chicken to the pan and cook until chicken is no longer pink about 5-7 minutes
  • Add back in the vegetables mix, and serve with instant pot rice

Instant pot rice:

  • Serves 4-5
  • 1 1/2 cup white rice
  • 2 cups chicken bone broth substitute vegetable broth or water
  • 1 Tbsp original ghee substitute any oil you use or butter
  • Salt and pepper

Instructions

  • Add everything to instant pot and mix
  • Cover seal valve, and set to rice function for 12 minutes
  • Once done let pressure release naturally 10-12 minutes
  • With a fork fluff the rice
