Mexican Style Stuffed Bell Peppers:

Switching it up this taco Tuesday and having some Mexican style stuffed bell peppers. I love prepping a batch of these during my meal prep Sunday’s. Because they are great for prepping ahead of time, easy to prepare, and makes for a quick dinner option during the busy work week.

Ingredients you will need:

  1. Green, red, or yellow bell peppers
  2. Oil of choice, I use garlic ghee
  3. Diced onions
  4. Ground turkey or any type of ground meat you have
  5. Taco seasoning
  6. Cilantro
  7. Black beans
  8. Cauliflower rice or regular rice
  9. Crushed tomatoes or tomato sauce
  10. Salt and pepper to taste

How to prepare stuffing mixture:

I first add my garlic ghee to a large pan and warm. And then I add in my diced onions, jalapeños, salt + pepper, and sauté for a few minutes. Next, I add in my ground turkey with the taco seasoning and cook through (about 5-7 minutes). Then I add in the cauliflower rice, crushed tomatoes, cilantro, black bean, mix, and cook for a few minutes or until most of the liquid is absorbed.

Stuffing the peppers:

I like to cut my bell peppers in half and deseed. And the I take the ground turkey mixture and stuff each bell pepper. I didn’t add any cheese to mine since I was out of it. But if you want, you can top with your favorite cheese, add to a 13×9 baking dish, and bake 350 F for about 20 minutes or until the bell peppers are nice and soft.

Whole30 compliant option:

And if you are currently doing a Whole3o, turning these into a Whole30 compliant meal is simple. Leave out the black beans and don’t add any cheese, and you are good to go. And another option I like to do with this meal, is with the leftover stuffing mixture, I add to a salad, and top with some fresh guacamole for a taco salad option.

 

Mexican Style Stuffed Peppers:

Ingredients

  • 2-3 red or green bell peppers
  • 1 Tbsp oil
  • 1/3 cup diced onions
  • 1 lb ground turkey
  • 1 1/2 Tbsp taco seasoning
  • 1/2 cup chopped cilantro
  • 1/3 cup black beans Omit if doing Whole30
  • 2 cups riced cauliflower
  • 1/2 cup- 3/4 cup crushed tomatoes or tomato sauce
  • Salt + pepper to taste
  • 1 small jalapeno deseeded

Instructions

  • Add oil to pan and warm
  • Add onions with salt + pepper and sauté for 5 minutes
  • Add in ground turkey with taco seasoning and cook through (5-7 minutes)
  • Add in riced cauliflower, cilantro, beans, and crushed tomatoes, and mix
  • Cook for 5 minutes or until liquid is absorbed
  • Cut your bell peppers in half and deseed
  • Stuff each of your bell peppers and add to a 13x9 baking dish
  • Bake 350 F for 20 minutes or until bell peppers are nice and soft
