Air fried fish tacos:

I was craving some fish tacos so I thought I would test out some air fried tacos in my air fryer. They were super easy to prepare and boyfriend approved. Todd said they were “different” but good and guess what I will take it. If he eats it then I know I did well. If you don’t have any air fryer you can follow the steps and just bake but I do prefer mine in air fryer since it leaves them extra crispy.

What you will need for the mango salsa:

First things first prepare your mango salsa so you can let it chill in the refrigerator while you prep the rest of your ingredients for the tacos.

  1. Chopped mango
  2. Cilantro
  3. Red onions
  4. Jalapeno
  5. Cabbage
  6. Lime juice
  7. Olive oil

How to make mango salsa:

Simple add all the ingredients into a bowl and mix. Sometimes I like adding in some cumin, paprika, and coriander for additional flavor but it is tasty either way. Set this into the refrigerator while you prepare your air fried fish sticks for tacos.

For your air fried fish sticks here is what you are going to need:

  1. Wild caught cod
  2. Eggs
  3. Tapioca flour
  4. Almond meal
  5. Cumin
  6. Chili powder
  7. Primal Palate’s seafood seasoning

How to make the fish sticks:

You are going to set up your dredging station by placing the cod slices on a plate, whisking the eggs in a bowl, and mixing the tapioca flour, almond  meal, and seasoning in another bowl. You will dip your cod slices into the egg mixture and then into the flour mixture. Spray your air fryer pan with some avocado oil and place your fish on the pan. Set your air fryer to 370 and bake 15 minutes flipping half way through.

Heat your Siete Foods grain free tortilla’s in a pan, add your fish sticks, and top with mango salsa. I also made some homemade guacamole to  make these tacos extra delicious. I simply mixed avocado, lime juice, garlic powder, salt + pepper, and cilantro to make a creamy, delicious guacamole.
